Wonderful Wisps and Tasty Treats

A peek behind the scenes last night in the kitchen with Finesse:
First in front:
Truffle and Cherry Wisps
Finesse put a spin on our classic childhood favorites cotton candy and bubble gum (who am I kidding – even adults love).
Their house made bubble gum flavored cotton candy is wrapped around a Stilton filled Bing cherry and accented with a hint of dehydrated white truffle creating a sweet, sour, and earthy burst of flavor.
Behind the cotton candy, allow me to introduce you to number two:
Slow Roasted Pork
Pork belly is dry rubbed with spices topped with tomato jam, set on a petite mac n’cheese soufflé and accented with dried mustard and tapioca.
Mac and Cheese Souffle? Yum.
And last, though certainly not least:
Tuna and Soy Suspension
Soy sauce is suspended inside of a ball of sashimi style tuna and accented with wasabi cream.
This rests gently atop of a seaweed and polenta cake with a touch of Yuzu lime.
