Roasted to perfection

I crave so many salads daily from Lakeview’s "petite Paris" Julius Meinl on Southport…it made featuring just 7 salads in a week quite tricky. But there is something so divine about their roasted vegetable salad, it needs to be shared.

They roast beets, squash, red onion, crimini mushrooms and toasted pumpkin seeds. This delicious rough chop is tossed in their amazing pumpkin seed oil vinaigrette and topped with cresenza cheese (smooth and creamy, similar to a brie).

The schmear, you ask? It is a wonderful pairing of squash puree and balsamic syrup.

Add some fresh black pepper, pair with a tall cinnamon orange or grapeberry iced green tea (three black, green or herbal brewed iced teas available each day, and everyday they rotate) and you have a sunny outdoor terrace seat on this side of heaven.

Time for lunch…better march a few blocks north and take mine to go!
