Oysters have always been linked with love…

Aphrodite, whom I studied in 6th grade, was the Greek Goddess of love. She sprang forth from the sea on an oyster shell. The dashing Casanova began every meal with a 12 dozen raw oyster amuse.

Last night, Calihan’s gorgeous raw bar took me straight to the French seaside. The oversize silver bowls were filled with ice, creating the perfect display for the seafood.

A traditional french menu was followed, with each bowl featuring Oysters fresh from the Northwest accented by unique sauces and flavors.

My favorite was a Pernod gelee – tres magnifique! A traditional mignotette with shallots and vinegar was my second choice.

It is always a crowd pleaser to make a focal point raw bar – a sure fire hit for an interactive cocktail bar.
